The Roaring Fork Dinner

In our spring pop-up dinner series we've mostly located ourselves in Denver - for this dinner, we find ourselves in the Roaring Fork Valley!  We'll be posting videos daily here throughout the weekend for friends far & wide to follow our culinary & hospitality adventure in the heart of Colorado.  

We kicked off our Roaring Fork weekend butchering a whole lamb. Our lamb is from the wonderful Clint up at Boulder Lamb in Longmont, CO.
There are two courses of the Monday dinner that we are serving on foraged bark from the river basins in the valley - today we went foraging for those platters and found some joy in connecting with the land, spending time by the river, and paying close attention to the plants and animals of the valley.
Joe & Seth headed over to Chris & Jody's house (our gracious dinner hosts) to set up the frame that we'll use for our lamb & fish tomorrow. We're experimenting with a variable distance frame so that we can do everything from direct roast to smoke.
